We seem to hear about a new oil on the market every month— coconut, palm, hemp. But it can be hard to understand which one to use for which purpose with all the hype about each oil. Although not technically oils, butter, vegetable shortening, and lard are also common cooking fats, and they have their own properties just like their very close cousins (maybe more like half-siblings).
